High-Altitude Cooking Tips
  • Water boils at lower temperatures the higher you go above sea level.
  • At sea level, water boils at 100°C (212°F).
  • For every 500 feet (150 meters) increase in elevation, the boiling point drops about 0.9°F (0.5°C).
  • Boiling pasta or beans at high altitude takes longer because the lower boiling point means lower cooking temperature. Try our pasta cooking time calculator for precise timing at your elevation.
  • Baking adjustments: Reduce baking powder slightly and increase baking time a bit when at high altitudes. For cake-specific help, check the cake baking time adjuster which incorporates altitude factors.
  • Candy making: Critical temperatures for candy stages must be adjusted downward based on the altitude. Our candy temperature stage calculator provides those precise adjusted values.
